To make the 'official' libreoffice online Docker install I had to add:
sudo docker pull libreoffice/online:master
*:master* being the crucial add-on.
Maybe save someone 10m of searching around:)

Anyone got any good tutorials for running libreoffice online in docker
and/or best practice info in how I can set this up?
